That’s the motto of Ernest Servantes, head cook for the Burnt Bean Co. competition BBQ team.
“The judge only has one bite and that’s all,” he says. “Each bite has to be like a one-bite cheesecake where you take one bite and it’s really rich and it’s really good, but you can’t have the whole pie.”
With his multiple appearances on numerous TV Shows, this self-professed “small town guy” has developed a near-cult following. Some of these appearances include BBQ Pitmasters and BBQ Pit Wars, plus Ernest was proclaimed the winner of the BBQ edition of CHOPPED.
As a Native-Texan, Ernest knows his way around a grill thanks to having grown up in a Mexican- American family that made cooking over a fire a regular occasion. A celebrated fixture on the local barbeque competition since he was a teen, Ernest can still be seen on any given weekend competing in BBQ all across the Lone Star State.
