WESTERN® BBQ Smoking Chips are primarily used to add wood smoke flavor to food cooked on gas and charcoal grills or electric smokers. The great part about using chips is that there are so many different flavors available to create your own unique combination.
For the best results, place the chips in a smoker tray or foil pouch. Electric smokers usually come with a tray and instructions. Some grills come with a built-in smoker tray. To make a foil pouch, take a 1’ X 1’ piece of HEAVY DUTY aluminum foil and place 2-3 handfuls of chips in the center and then wrap the foil up into a pouch. Poke holes in both the top and bottom of the pouch with a fork so the smoke will be able to get out. Then, simply place the pouch on the cooking grill above the hottest burner. When using charcoal, the pouch can be placed directly onto the hot coals. Within a few minutes the tray or pouch should begin to smoke. Once it does, adjust your grill to desired cooking temperature and place your food on the grill to enjoy the wonderful wood smoke flavor. If you are going to cook for an extended period of time you may want to make up additional trays or pouches so you can have one ready when the wood in the first has quit smoking.
